If the stone is too fine, it doesn't take off the steel for the new edge. If you find the stone is course enough, it might be too soft and start crumbling as you're sharpening. The stones I recommend (made by Norton), are made of aluminum oxide. The same material grinding wheels are made of and masonry saw blades. These stones are tough!
